Peanut Butter + Banana Granola (See Jane Make)

Homemade granola was a household staple growing up.  Although I begged and pleaded for the packaged granola at the grocery store (you know the kind with huge, nutty, chunky clusters…mmm), my mom wouldn’t budge because she made herself at home and unlike the store-bought version, it wasn’t full of additives .  As I got older, I began to appreciate the fact that my mom said no to me about such things and also grew to love her granola.  She’d make me huge batches to bring to college and I still snack on it when I visit home.

And now, I share with you my mom’s granola that started making in the 70s–before I was even a twinkle in her eye.  You can tweak the recipe any which way you want; here, I made a peanut butter and banana version.


5 cups old fashioned oats (NOT quick)
1/8 chia seeds
1 cup chopped walnuts
1 cup chopped almonds
2 tsp cinnamon
1/2 tsp nutmeg
1 T vanilla extract
1/2 salt
1/2 c peanut butter (I used fresh honey peanut butter from Whole Foods)
2 very ripe bananas
1/4 honey

Preheat oven to 300°.  Line baking sheet with parchment paper.  In a large bowl, combine the dry ingredients.  In a small bowl, combine the wet ingredients.  Add the wet ingredients to the dry ingredients and mix to combine. Drizzle with canola oil and mix around on baking sheet before placing in oven.  Bake for 30 minutes, stirring occasionally.
