Easy Paleo Granola (See Jane Make)

I grew up eating my mom’s granola.  Nothing compares–it’s been my favorite for decades.  However, I tried a co-workers granola and when she told me it was paleo, I couldn’t believe it.  It was crunchy, nutty, coconut-y–pure deliciousness.  How could there not be grains in it?  Well, I immediately googled and decided to make my own (as I didn’t want to spend $15 on it at Whole Foods).  I found this recipe and made a few tweaks to it to create my own perfect, paleo granola.

1 cup raw walnuts
1 cup raw cashews
1 cup raw pepitas
1 cup raw sunflower seeds
1 cup raw pecans
1 cup coconut flakes
1 cup dried cranberries
4 T coconut oil
1/3 cup honey
1/2 t cinnamon
1/2 t kosher salt

Preheat oven to 300 degrees.  Pulse nuts in food processor/blender (the Vitamix is powerful, so not too long–you want plenty of chunks).  Melt coconut oil over low heat and add honey, cinnamon and salt.  Combine all ingredients and spread evenly on parchment paper.  Bake for 35-40 minutes, stirring at least twice while baking.  Let sit for at least 20 minutes while cooling (this is important–it created a chunky texture!)


PS It’s REALLY filling because there’s no oats in it.  This stuff keeps you full until lunch, easily.
