Summer Pasta (See Jane Cook)
When the temperatures rise and the grill seems too hot, I always turn to a cold pasta. I whisked together about half a cup of extra virgin olive oil and the juice of two lemons (and a bit of their zest), added a bit of salt, pepper and mixed it with angel hair pasta. Then, I added some haphazardly chopped basil and parmesan cheese and in about the time it took for the pasta to boil, dinner was ready (of course, I had it chill in the refrigerator for a bit first).

What a great idea! I've made this type of recipe before, but never tried it cold! I'm definitely going to try that. My summer go-to meal when I want something easy and don't want to heat up the kitchen is a simple homemade white kidney bean dip with a baguette, cut-up veggies, kelbassa or prosciutto and a few different cheeses. Perfect with a glass of wine too!

That looks good! I don't think I've eaten cold pasta besides pasta salad. But I'm always looking for new pasta dishes so that I can continue eating lots of pasta but tell myself I'm switching it up.

I discovered your blog through someone's pin of one of your oufits on Pinterest and I love it. I only wish I wasn't so busy and could sit and read blogs. This pasta looks delicious. I tried something like this that was a Rachael Ray recipe but it had some sort of confusing egg sauce that I couldn't figure out.
