Cooking On The Fly (See Jane Make)

Sometimes, you just need a meatball.  I got home from work at 7PM, realized I had no food, ran to the store and came back with the essentials–and still no idea what I was going to cook.  I scrolled through blogs to procrastinate and Liz’s meatball recipe caught my eye.  I knew right then and there I needed to make my go-to Turkey Italian meatballs (recipe) right then and there. I also prefer to make my own sauce, so I added crushed tomatoes and fresh basil from my windowsill plant, all served over an easy pasta.  Et voilà:  dinner.

For the meatballs:
1 lb ground turkey
3 cloves garlic
1 t salt
1 t pepper
1/2 t red pepper flakes
1 t italian seasoning
1 egg
1/2 c italian breadcrumbs
handful fresh chopped basil
Combine all ingredients in a large bowl.  Form into meatballs and sauté in olive oil with one onion (diced) over medium heat until browned on all sides.  Add 28 oz. can of crushed tomatoes, salt and pepper to taste for additional half hour.  Serve immediately over pasta.
