Apple Cinnamon Muffins (See Jane Bake)

It may be cliche, but once fall rolls around, I’m all about the apples.  Apple pie?  Sign me up.  Apple crumble?  Feed me.  Applesauce?  Mmm, just like my mom used to make (heated up!).  At brunch this week, I ate the most delicious apple cake at Lula Cafe.  It wasn’t enough to satisfy my taste for apples; I picked up apples at the grocery and was determined to make something just as delicious and apple-y.  The verdict?  My delicious breakfast for the week.

**I used this recipe and made a couple tweaks, including: 1/2 t nutmeg, replaced half of the white sugar with brown sugar, used three whole apples, and replaced the topping with a glaze using 1/2 c confectioners sugar + 1 T milk.
