Tomato Medley Bruschetta (See Jane Make)

The best thing about summer?  Possibly tomatoes.  But really, bruschetta is possibly the easiest and tastiest appetizer out there.  And since I’m just getting acclimated to my new house/kitchen, the easier the better.  My recipe:

  • container of mixed cherry tomatoes (or about 4 vine-ripened tomatoes)
  • handful of basil leaves, chopped (I grabbed mine from the basil plant on my kitchen windowsill)
  • 3 cloves garlic, minced
  • 2 T evoo
  • pinch of salt and pepper
  • loaf of crusty bread
Mix the first five ingredients in a bowl and let sit for a half hour.  Scoop tomatoes on bread and drizzle with balsamic glaze.
