Jalapeño Popper Dip (See Jane Make)

I see myself as a dip connoisseur.  At any given party, you’ll find me near the dips and snacks.  Perhaps my love of dips stems from my early love affair with chips and salsa.  From there it grew into guacamole, Lick-a-maid or Dunka-roos; if you could dip it, I’d eat it.  Even as my palette has refined, my love of potluck and party dips hasn’t waned.

This past Superbowl, I wanted to bring a dip that I’d tasted but never attempted to make.  Enter: the most delicious jalapeño popper dip.  I modified this recipe and made my own topping of panko breadcrumbs and butter.  (Also, I only used monterey jack cheese, left out the onions and added a can of green chilies). Please observe the Frito “scoops” I used for the most enjoyable dipping experience.  I must warn you that there is absolutely nothing healthy or nutritious about this dip, so please enjoy accordingly.
