Pumpkin Bars (See Jane Bake)

It may feel freezing but the harvest isn’t quite over yet–pumpkin is still to be enjoyed!  My favorite foods at Thanksgiving are almost everything BUT the turkey, but it’s mainly because I’m a ‘sides’ girl.  I’ll take green bean casserole, mashed potatoes and stuffing (my mom makes an incredible sausage and onion version) over the big bird any day of the week.  When it comes to dessert, I’m usually too full on the said sides to enjoy, but I’ll always enjoy something pumpkin.  These bars (I tweaked and added pumpkin pie spice) are a great way to enjoy everything pumpkin before the season is over.
