Roasted Asparagus With Browned Butter + Balsamic (See Jane Cook)

deliciousness

I don’t want to toot my own horn, but I may have discovered the most delicious asparagus.  I found this recipe which called for a sauce that contained 1 tablespoon soy, 1 tablespoon balsamic vinegar and 2 tablespoons browned butter; I changed it up a bit (because I wanted a bit more tang) by adding another tablespoon of vinegar and a bit more butter.  It’s essential that you slightly brown the butter in a pan rather than just melt it–it totally makes the flavor of the sauce!

Roast the asparagus (be sure to salt and pepper it and add a bit of olive oil so it doesn’t stick to the foil!) in the oven at 400 degrees for 12-15 minutes before pouring the combined mixture over it.  If you’re looking for a new (but simple) asparagus recipe, I must insist you try this–it’s heavenly.
